Results from Brook Trout Nutrition Study Published

It took a few years from start to finish, and now the full nutrition findings of wild caught brook trout from the Adirondack region of New York state are published in The Journal of Food Composition and Analysis.  We found that wild brook trout has half the amount of fat of store bought trout and slightly more protein content.  On average, the edible portion of brook trout will be slightly less than half of the total weight of the fish, so a one pound fish will yield about 7 ounces of meat.  Brook trout is definitely a nutritious, tasty fish!  Just be sure to check DEC fishing regulations and be a good steward of the resource for the next generation.
