Baked Butter and Herb Perch Fillets

Ingredients
1/4 cup butter, melted
1/2 cup whole grain Panko breadcrumbs or crushed saltine crackers
1/4 cup grated Parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 pound yellow perch fillets

Directions
Preheat oven to 350 degrees and pour the butter into a shallow dish.

Combine the cracker crumbs, Parmesan cheese, basil, oregano, salt, and garlic powder in a separate shallow bowl.

Dip the perch fillets in the melted butter, then press the fillets into the seasoned cracker crumbs to coat.  Arrange the seasoned fillets on a baking sheet and bake the fillets in the oven until the coating is browned and the fish flakes easily with a fork – about 25 minutes.

Serves 4.

  1. You could definitely leave the garlic out and maybe add some onion for a savory flavor or a little fresh ground black or white pepper. Let me know if you find a flavor combination you enjoy.
