Simple Wild Duck Jam Appetizer

This is a great, quick appetizer!

Ingredients:

  • boneless, skinless duck breast from one duck, ~6-8oz
  • simple brine, 1 qt cold water with 2 Tbsp kosher salt (optional: clove of garlic, sprig of parsley, 1 Tbsp of brown sugar)
  • 2 Tbsp flour, seasoned with salt & pepper
  • 2 Tbsp butter
  • 2-3 Tbsp of pepper jelly or a fruit jam with a pinch of cayenne pepper (want sweet, plus some spice)

Preparation:

  1. Cut duck breast into dice size pieces and place in a simple brine for about 20 minutes.
  2. Place flour on a plate and season with salt and pepper.
  3. Drain the duck pieces and then toss lightly in the flour.
  4. Melt butter in a skillet over medium high heat.  Add the floured duck pieces and brown the duck on all sides, about 6 minutes.  Add the jelly to the pan and scrape up any browned bits, creating a glaze on the duck pieces.
  5. Arrange the glazed duck bites on a small plate with a garnish and serve with toothpicks.
