Smokin’ Game Hash

In an effort to eat more vegetables in the New Year, this hash is chock-full of veggies along with smoked meat.  Serve with an egg for a delicious, healthy brunch and a perfect way to celebrate the hunt in the New Year.

Smokin’ Game Hash

Ingredients:
2 cups diced potatoes
1-2 Tbsp. cooking fat, such as lard or olive oil
1 small shallot, chopped, or ¼ cup chopped onion
1 carrot finely, chopped (~1/4 cup)
1 cup chopped up green veggies of choice, such as green beans, celery, broccoli, or zucchini
1 cup diced smoked meat, such as smoked trout, smoked goose, or smoked duck
Salt and pepper to taste
Seasoning for fish: dash of Old Bay and squeeze of fresh lemon juice
Seasoning for waterfowl: dash of poultry seasoning (sage, coriander, thyme) and lemon juice

Preparation:

Parboil potatoes for about 5 minutes until slightly soft, but still firm. Add the oil to a large skillet over medium high heat. Add the vegetables and cook until the veggies are soft and the potatoes are slightly browned, about 7-9 minutes.  Add the smoked meat and seasoning and cook an additional few minutes until heated through.

 

Serve with an egg on top (poached or over-easy). Makes 4 servings.
